HOPKINSVILLE, KY (CHRISTIAN COUNTY NOW) – After years of brewing and establishing themselves as a gathering hub for the city, Hopkinsville Brewing Company is expanding into a food truck that will be serving up pizza along with their handcrafted beer.

“We make it a point to listen to our customers, and a lot of our beers are created in response to something someone has asked for or an idea or suggestion. Probably the number one thing we heard over the last eight years was we need food,” said Kate Russell, a founder and brewer at HBC.

Until now, she and co-founder and brewer Joey Medeiros have been mostly focused on their unique brews, offering a limited menu of appetizers and snacks to patrons. With beer production taking up so much space, they felt adding a kitchen was not feasible. So, when they saw a pizza food truck was up for sale, she jumped at the chance to take it on.

“If it had been set up for any other type of food, I probably wouldn’t have even shown interest. But this was pizza, and pizza and beer are my two favorite things together, so I feel like the universe was speaking to me,” explained Russell. “I don’t have all the ideas and neither does Joey. At the end of the day our customers are what keeps us open so it would be silly if I didn’t listen to them.”

She is hoping the food truck will be up and running within a few weeks and is spending that time perfecting recipes and testing out a menu. Russell said their pizza picks will be inspired by what she enjoys making at home, with toppings to appeal to everyone. While a schedule for the truck has not been set in stone, it will provide food for the brewery and occasionally go out to events.
