HOPKINSVILLE, KY (CHRISTIAN COUNTY NOW) – A new restaurant in Hopkinsville is offering the community fast, authentic Mexican food with over 50 menu items. Locally owned Taqueria El Rincón opened in mid-July on North Main Street, with a drive through for tacos on the go, and some special recipes to offer the community new flavors.
“I think the food is delicious honestly,” said Blanca Hernandez with El Rincón. “I’m really crazy about the aguachile, which is the shrimp. It’s a little spicy, it’s like a ceviche type dish…we are offering some new things that the town doesn’t have.”
Hernandez told Christian County Now that since opening, they have been pretty packed every day. They receive a large amount of to go orders with their drive through for those looking to swing by and quickly grab some great food. The menu currently has over 50 items, with several varieties of soup, seafood, burritos, tacos, fajitas, and rice dishes.
Patrons can order sopes, quesabirrias, chimichangas, and burritos, or try out other traditional foods. Menudo, a classic tripe soup, is also on the menu along with aguachile, which features fresh raw shrimp and spices.
“The menudo is probably my other favorite…it’s one of those dishes you really have to cook it right for it to taste good,” Hernandez said.
The brains behind the menu is owner Jose Aguilar. Leading up to the opening, he has been busy in the kitchen training the staff on the best ways to cook these traditional recipes, while adding his own flair. Aguilar has other businesses in Nashville, Tennessee and decided to open his newest venture in Hopkinsville after moving here.
Hernandez said the restaurant will not be carrying any alcohol and will instead offer a variety of fun drinks that the entire family can enjoy. With their kid’s menu also available, families can dine in and sit inside or outside, and those looking for a quick meal can visit the drive through.
Find Taqueria El Rincón at 1133 North Main Street in Hopkinsville. They are open Monday through Saturday from 10 a.m. to 9 p.m.
